    An enzyme was purified from a crude enzymatic extract obtained from a rice Miso, using two steps of chromatography, the former by Butyl-Toyopearl 650M and the latter by DEAE-Sephacel. As the result it was found that the product was a single rice Miso amylase of 53, 000 dalton.
    The optimum pH for the activity of the rice Miso amylase was found at about 5. The optimum temperature was about 50°C. Strong inhibitors against the enzyme activity were MgSO4, CuSO4, ZnSO4 and CoCl2.
    A 77% of the soluble starch substrate was hydrolyzed by the rice Miso amylase, giving oligosaccharides, of which major component was maltose.
    The rice Miso amylase showed the similar amino acids composition to the α-amylase obtained from the rice Koji which was already reported.
    It was also made clear that the rice Miso amylase was an a-amylase derived from the Koji applied at the initial stage of Miso fermentation and the amylase activity has been carried over up to the final maturing stage of Miso.

    In order to obtain the scientific data for the effective operation of kitchen knives the movement of muscles were determined by electromyogram. Each two points in the muscles of the upper arm, the fore arm and the palm of right hand was selected as the measuring point and cucumber was used as the object of the operation of kitchen knives. As the results, (1) It was realized that the kinds of effective knives are lighten, thin back, double edged and small angle edged ones respectively. (2) When the thumb is put on the back of kitchen knives, the grip of kitchen knives is the most effective for the movement of muscle. (3) It was clarified that the participation of muscle is influenced by the difference of the kinds or the grip of kitchen knives.

    Confectionery used in the Imperial court in the Edo era was studied by the records of orders, known as “Goyohikaecho, ” kept in Toraya, a confectionary shop in Kyoto. Five volumes of Goyohikaecho were surveyed to clarify the usage of Japanese confectionery at five palaces in 1783 : Kinri Palace, Sento Palace, Omiya Palace, Nyouin Palace, and Shinnyouin Palace.
    The confectionery supplied to each palace were analyzed by kind and frequency of use. The number of kinds of confectioneries were fewest in Omiya Palace and greatest in Shinnyouin Palace. Omiya Palace tended to be supplied with the same confectionery many times, while Shinnyouin Palace tended to be supplied with different kinds each time. The confectioneries were divided into three groups; seasonal, non-seasonal and others. In Shinnyouin Palace, various seasonal confectioneries were supplied, but in Omiya Palace, the number was few. By cluster analysis of classified confectionery data, Kinri, Sento and Nyouin Palaces had a strong similarity. Because of the palace hierarchy, Kinri and Sento Palaces were supplied with many high-priced confectioneries, while the other three palaces were supplied a small quantity of low-priced confectioneries.

    The effect of water-soluble polymer, hydroxypropyl cellulose (HPC), on solubilization behavior of sodium n-dodecylbenzene sulfonate (DBS) toward three kinds of oil-soluble monoazo dyes, i.e., Oil Yellow AB, Oil Yellow OB and Oil Orange SS, has been investigated in aqueous solutions containing DBS, HPC and sodium sulfate (0.05 mol/l).
    The amount of solubilized dye increased with an increase in the concentration of HPC. The weight-average molecular weight (Mw) of HPC showed little effect on solubilization of those dyes. The solubilizing power (Sp) decreased in the order, Oil Yellow AB> Oil Yellow OB> Oil Orange SS regardless of the presence of HPC. The Sp increased with the temperature below the cloud. point of HPC, but decreased above that. It was estimated from the viscosity behaviors of DBS-HPC mixed solutions that DBS-HPC complexes are formed by the interaction between DBS and HPC in water. The absorption spectra of oil-soluble dyes in n-dodecane, n-dodecylbenzene, and the aqueous solution of HPC suggest that Oil Yellow AB and Oil Yellow OB are mainly solubilized in the part of HPC region of DBS-HPC complexes, while Oil Orange SS is mainly solubilized in the part of hydrocarbon region of the complexes.

    Housing visual environment is influenced sufficiently by the housing external environment. Therefore, evaluation for the housing visual environmnt by the residents are considered to differ with the housing external environment.
    The detailed data for the housing external environment, however, have not been sufficient, and the insufficiency of the data have made it difficult to show relation between the residents' evaluation for the housing visual environment and the external environment.
    Therefore, the authors conducted a survey of the housing external environment in Osaka Prefecture to make it clear how the housing external environment influences the housing visual envorinment and to discuss to obtain appearance location, physical quantity by modeling five elements consisting of the housing external environment and the various housing distances respectively.

  • -Comparison between the Terrace Access-Type and the North Door Access-Type-

    This study was performed to analyze on the actual situation and the estimation for the way of dwelling in Okinawa Prefectural public housing. The main subject of this paper is to compare the differences between N-type (which is short for north door access-type) and S-type (south terrace access-type). The survey was carried out in July, 1990.
    The results are as follows :
    (1) The N-type plan has been predominant over the public housing for a long time, but the dwellers are not much satisfied with a balcony, a stair case and an entrance of that plan. The south Tatami room is used mostly for multi-purpose.
    (2) The S-type plan is newly developed plan which give access to rooms through the south terrace. S-type plan has more answer than N-type plan in a ratio of evaluating “good” under the present situation. The L-D room with a wooden floor is in use for a family room.

  • -On the Use of the Terrace and the Rooms-

    This study was done to find out the actual situation and the problems of the way of dwelling in the terrace access-type public housing. Especially the principal subject of this paper, is to analyze the evaluation for the terrace and the use of the rooms. The questionnaire survey was administered to two public housing estates in August, 1990.
    Results are summarized as follows :
    (1) Regarding the location and the shape of the terrace, about 70% of the households investigated think the present situation to be proper.
    (2) About the way of entering through the terrace, about 74% of them think the present situation to be desirable.
    (3) The terrace is used for various kinds of purpose like a front yard in the detached house.
    (4) They have each access to two rooms through the terrace, and about 60% of them take supper in the living-dining room and also about 60% of them meet their guests in the south side Tatami room.
